Meal Prep | Italian Style Salad

Recipe 3 of our Cooking on a Budget series.

Side note: I didn’t realize how much fat this recipe has until I calculated it for this post, and I am choosing to ignore that because it is just so tasty and I already meal prepped for the week. It is coming mostly from the pepperoni and dressing if that makes you feel any better.

Total Prep Time: 10 minutes | 5 Servings

Macronutrients: 30g Carbs, 22g Protein, 40g Fat | 580 Calories

Necessary Tools: Large Mixing Bowl, Meal Prep Jars (Large), Mixing Spoon, Meal Prep Jars (Small), Tablespoons

Ingredients

  • 5 oz. Mini Genoa Salami ($6.50-$7.50)

  • 5 oz. Mini Pepperoni ($4-6.50)

  • 30 Pitted Green Olives ($2.70-$7)

  • 5 oz. Feta Cheese ($4-$7)

  • 10 oz. Shredded Carrots ($3)

  • 15 oz. Whole Kernel Sweet Corn ($1-$3)

  • 15 oz. Black Beans ($1-$2)

  • 5 Mini Cucumbers ($2.50-$6)

  • 1 1/4 c G Hughes Sugar Free Balsamic Dressing ($3.80-$6)



Total Est. Cost: $28.50-$48

Est. Cost Per Serving: $5.70-$9.60

Instructions

  1. Take out all necessary tools and ingredients (duh)

  2. Mix all ingredients into a large mixing bowl except for the dressing

  3. Separate 4 Tbsp. of dressing into small meal prep jars

  4. Separate salad mixture into 5 meal prep containers and enjoy!
