Meal Prep | Bacon Gruyère Egg Bites

Necessary Tools: Cheese Grater, Mixing Bowl, Liquid Measuring Cups, Dry Measuring Cups, Tablespoon, Whisk or Blender, Muffin Pan, Silicone Muffin Liners

Ingredients

  • 6 Eggs (est. $4)

  • 1 c. Cottage Cheese (est. $4)

  • 1 c. Shredded Gruyère Cheese (est. $7-$12)

  • 10 Tbsp. Pre-Crumbled Bacon or Bacon Strips (est. $6-$10)

Instructions

  1. Take out all necessary tools and ingredients (duh)

  2. Line muffin pan with silicone muffin liners (linked below, and trust me - they are a MUST HAVE)

  3. Preheat oven to 400ºF (only if you plan on cooking them all at once)

  4. Combine eggs and cottage cheese into a bowl and whisk (or blend) them together

  5. Shred gruyère cheese until you have roughly 1 cup

  6. Mix in bacon bits with shredded cheese (If you aren’t lazy like me and actually bought fresh bacon, this is where you would cook it and then cut it into bits)

  7. Pour egg mixture evenly into muffin cups

  8. Top eggs with shredded cheese and bacon mix (feel free to mix it into each cup so it’s evenly distributed)

  9. Bake at 400ºF for 25 minutes (if you like a little crisp like me, then broil the eggs for 2-3 more minutes after they bake)

  10. Optional: Freeze all of the egg bites overnight and cook them each morning as stated in Step 9

Reheat Instructions: Microwave for 1-2 minutes or bake at 350ºF for 10-15 minutes (if already cooked)
