Cinnamon Vanilla Pancakes

Recipe 4 of our Cooking on a Budget series: Breakfast Edition

Total Prep Time: 5 minutes | Total Cook Time: 15 minutes | 8 Servings

Necessary Tools: Mixing Bowls (x2), Frying Pan, Spatula, Plate, 1/4 Measuring Cup

Note: I am not putting prices because all of this should ALWAYS be stocked in your house! C’mon girls!

Ingredients

  • 1 c. All-Purpose Flour

  • 1 Tbsp. Light Brown Sugar

  • 2 1/2 tsp. Baking Powder

  • 1/2 tsp. Ground Cinnamon

  • 1/4 tsp. Salt

  • 1 c. Milk

  • 1 Tbsp. Lemon Juice

  • 1 Large Egg

  • 1 Stick Butter

  • 1 tsp. Vanilla Extract

Instructions

  1. Take out all necessary tools and ingredients (duh)

  2. Mix all the dry ingredients in one bowl

  3. Mix all the wet ingredients in another bowl (only 2Tbsp melted butter!)

  4. Slowly pour the wet ingredients into the dry ones while mixing until the batter forms

  5. Heat 1Tbsp butter in the frying pan on medium heat and pour 1/4c portions of batter into the pan

  6. I mean, I’m no professional, so just flip when you think it’s ready I guess haha

  7. Repeat step 5 until the batter is gone

Note: I like to sprinkle cinnamon sugar on the top of my pancakes while one side cooks. Delish!

Reheat Instructions: Microwave for 1-2 minutes or pop into the toaster at your desired toastiness!
